Ryusen has been forging kitchen knives since 1953 according to traditional methods dating back to more than 700 years, in the Echizen region of Japan. During the past few years Ryusen has developed a unique method of forging, stropping and hardening steel, and thus making the creation of the Ryusen Hamono steak knife a reality. The unique Ryusen- rin pattern on the blade is created by forging core-less vg10 and vg2 steel and by producing a razor-sharp edge after the stropping. Because of its unparalleled cutting qualities it is the quintessential table knife.
Slijperij J.M. van Rangelrooij
The combination of steel grade, hardness and the edge angle not only determines the sharpness of a knife but also how long the knife will remain keen, according to Elwin de Veld. Knowledge and expertise in his sharpening shop has been passed on from generation to generation since 1894 and the sharpening of knives has been elevated to a true art form.

The Jonnie Boer steak knife is handcrafted at Ryusen Hamono in the Echizen province of Japan. This exquisite steak knife with unparalleled cutting qualities is make of 70 layers of Damascus VG10/VG2 core-less steel. This Uchihamono (Japanese) casting method dates back more than 700 years and is only applied by Ryusen Hamono.
